Easy Biscuits

easy biscuitsI have been looking for an easy biscuit recipe for a long time. I love to have a delicious biscuit dripping with butter to eat alongside hot soups and stews. However, I didn't want one that required shortening, butter, or a pastry blender. I have 5 kids, and both my budget and amount of spare time are inversely proportional to the size of my family. Therefore, I need something quick and easy.

I have found both of those things with this recipe, which calls for vegetable oil instead of shortening or butter. I found this recipe on Food.com, posted by momthecook #2.

Ingredients

  • 2 cups flour
  • 3 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/3 cup vegetable oil
  • 2/3 cup milk

    Mix the dry ingredients in a bowl. Put the vegetable oil in a cup and add the milk, but do not stir. Add the wet ingredients to the dry ingredients and mix lightly.

    The original recipe said to roll out between two sheets of plastic wrap and cut into biscuits. I don't have that kind of time, so I just used my hands to divide the dough into 8 equal pieces. I rolled each ball of dough between my hands and then pressed lightly to flatten a bit. I baked them on a pan lined with parchment paper. (Reuse that parchment paper when possible folks! That stuff is expensive.)

    Bake at 475F for 10-12 minutes, until lightly browned. Enjoy!
